Banting dessert Baked apples with marscapone

Banting means eating meals that are Low Carb High Fat (LCHF). You can read more about the whole storyand what Prof. Tim Noakes has started with his food revolution.

Over at Food 24 we thought wed feed the need to fit in with your new and pretty delicious eating plan. And guess what? Banting does not mean no puds. You canenjoy dessert with no sugar.

Heres just one example of a gloriously decadent and satisfying dessert thats guilt-free. No sugar or sweeteners of any kind. I love using fruit as the hero of the dish, it always gives mother nature a real chance to shine.

With these gorgeous baked apples, the cinnamon coaxes extra sweetness out of the fruit and its all balanced off beautifully with the toasted buttery nuts and silky mascarpone. Whats not to love?

Cinnamon baked apples with almonds and mascarpone
Serves 2 | Preparation time 5 minutes | Baking time approx. 25 minutes

Ingredients
2 apples, cored
1 Tbsp butter, softened
2 Tbsp chopped almonds or pecan nuts
Pinch of cinnamon
1-2 Tbsp mascarpone or cream cheese
Optional (not LFHC): Drizzle of fresh orange juice and grating of zest

Method
1. Preheat your oven to 180C and lightly grease a small baking dish.

2. Mix together the butter, nuts and cinnamon and divide the mixture between the two apples, filling the holes where the cores were.

3. Place on the baking tray and bake until golden and the apples are soft enough to eat easily with a fork.

Note
Speed up the process by microwaving your cored (but un-filled) apples for 4-5 minutes before filling them and placing them in the oven for 10-15 minutes or until done to your liking.

Also give these blistered berries with lemon and clotted cream a try.
